God Bless the Avocado

Today is day five and I feel so much better today than I did yesterday. I have the avocado to thank for that. I've been doing a lot of crunching as you can imagine eating 100% fruits and vegetables. Today for lunch we made a beautiful spinach salad and topped it with red bell pepper, cucumber, red onion, and radish then alongside we had two giant slabs of beefsteak tomatoes. We finished it with a light vinaigrette and a Haas avocado. YUM the avocado made the whole salad incredible. For dessert we sliced into the juiciest and sweetest watermelon I have ever tasted.

Why does our produce taste so great? We are eating locally grown and harvested produce. Our watermelon was picked this week and the woman who sold it to me grew it herself. She beamed when she told me how incredible this crop was. I felt like I was let in on a little secret and now it is too good not to share. If you live in or around Springfield, Missouri you need to get yourself over to the Well Fed Coop market located at 1925-B E. Bennett. I'm telling you it is worth the drive!

When I get back from the market later today I will do my video post. Perhaps I will share a peek at our bounty. Stay tuned...

great photo! ps i see you've started a creative blog recently? have you considered doing multiple tabs on one blog so you can have them together? i just did that with and kinda dig it :)

Cool I will have to check that out. Actually the creative blog is for a friend of mine. She owns an art studio that offers classes in various mediums. She wanted a blog but doesn't have the time to develop it. I have four blogs so that might help me keep them together and I need to contribute to them more frequently than I am.

Your energy level was down quite a bit yesterday...but to be expected....glad you got through it and are feeling better today with the avocado and watermelon
