the order of things

"Twelve more orders of Crab Louie and we are all out of cracked crab!"
"Well, get the new kid to do it. Hey, but wait don’t tell him. See if he figures it out for himself."
Hey new kid, “What’s your name? Go crack the crab legs for the Crab Louie.”
“Jeff.”
“Okay Jeff, here are the crackers and the bucket of steamed crabs, be sure to pick out all the meat. We have twelve more orders of Crab Louie and when you are finished with that go slice about twelve lemons for tea."

For dressing

1 cup mayonnaise
1/4 cup ketchup-based chili sauce
1/4 cup minced scallion
2 tablespoons minced green olives
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon bottled horseradish
Salt and pepper to taste

For salad

1 1/2 lb jumbo lump crabmeat
Iceberg lettuce, shredded
Capers
Tomato wedges
Avocado slices
Hard-boiled egg
Lemon



When I lived in San Diego, I used to eat the Crab Louie at Point Loma Seafood. It is by far my favorite salad. If you happen to be visiting the San Diego area I highly recommend that you stop there for lunch. It may seem a bit pricey but I assure you it is worth it. The seafood is fresh and delicious.

However in the meantime the recipe above looks like it might just do the trick to satiate my desires for a Crab Louie!

Who knew blood and lemons would take me in this direction, however, this conversation very nearly happened. My husband used to tell this story. He worked restaurants while going to school. It was a nasty right of passage for newbies.

The salad, well what can I say, I am sooo ready for summer veggies and something crisp and delicious.

Yes, I grew up on the Gulf Coast and crab was my favorite. Just isn't the same frozen. Your receipt sounds so good! Makes me hungry!
